Nancy's Notes

t seems that 50 years has suddenly passed by since we opened the doors to our small, humble creamery in Springfield, Oregon. Thanks for joining us as Springfield Creamery celebrates its 50th Anniversary this year! When we started the Creamery in 1960, the notion hadn’t ever crossed our minds that our small family business would one day be saved by a Grateful Dead benefit concert, or that we would fight fires – both figuratively and literally – eventually helping lead an honest, cultured food revolution that now spans three generations.

n celebration of our history, we thought we’d share a favorite Kesey family recipe. Chuck’s mother (now age 93), has a long history of cooking up this delicious version of cheesecake using cottage cheese-offering more texture, more health and more flavor than the traditional style. A perfect recipe for early spring, the candied ginger can be used from the ‘winter’ staples, while adding bright and crisp flavors that allude to the coming summer warmth.
